Burger Patty Preparation

    Prepare the Beans

    In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the rolled oats, diced red bell pepper, chopped onion, minced garlic, cumin powder, chili powder, salt, and black pepper to the mashed beans. Mix until well combined.

    Form Patties

    Using your hands, shape the mixture into two equal-sized patties. If the mixture is too wet, add a little more rolled oats.

    Cook the Patties

    Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.

Assembling the Burger

    Prepare the Buns

    Toast the whole grain burger buns lightly on a skillet or in a toaster.

    Add Toppings

    On the bottom half of each bun, place two lettuce leaves. Top with a cooked veggie patty, followed by a slice of tomato and avocado if using. Cap with the top half of the bun.

    Serve

    Serve the veggie burgers immediately while warm, with your favorite side dish.
