    Prepare Vegetables

    Chop the red bell pepper and onion into small pieces. Dice the tomato and set aside.

    Cook Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and set aside on a paper towel to drain excess grease.

    Cook Hash Browns

    In the same skillet, add the hash browns and cook until golden brown and crispy, about 5-7 minutes. Stir occasionally for even cooking.

    Sauté Vegetables

    In the skillet with the hash browns, add the chopped onion and red bell pepper. Sauté for 3-4 minutes until they are softened.

    Cook Eggs

    In a separate non-stick skillet, cook the eggs over easy. Heat the skillet on medium-low and crack the eggs in, cooking until the whites are set but the yolks are still runny, about 2-3 minutes.

    Prepare Avocado

    Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice into thin pieces.

    On a plate, layer the crispy hash browns topped with the sautéed red bell pepper and onion mixture.

    Crumble the cooked bacon over the hash browns.
