    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes until they become translucent.

    Add Garlic and Other Vegetables

    Add the minced garlic, diced carrots, and diced celery to the pot. Sauté for an additional 5 minutes until the vegetables are softened.

    Combine Base Ingredients

    Pour in the canned whole tomatoes (with juice) and vegetable broth. Add bay leaves, salt, black pepper, and sugar. Stir to combine.

Cooking

    Simmer the Soup

    Bring the mixture to a boil over high heat, then reduce the heat to low. Cover the pot and let the soup simmer for about 30 minutes to allow the flavors to meld.

    Add Herbs

    After 30 minutes, stir in the dried basil and dried oregano. Let the soup simmer uncovered for an additional 10 minutes.

    Blend the Soup

    Remove the bay leaves. Use an immersion blender to puree the soup until smooth, or blend in batches using a countertop blender.

Serving

    Garnish and Serve

    Ladle the soup into bowls and garnish with fresh basil. Serve hot with crusty bread on the side.
