    Prepare the Hash Browns

    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the hash browns and season with salt and black pepper. Cook for about 5-7 minutes, flipping occasionally, until they are golden brown and crispy. Remove from skillet and set aside.

    Cook the Sausage

    In the same skillet, add the remaining tablespoon of olive oil. Add the breakfast sausage and cook over medium heat until browned and fully cooked, about 8-10 minutes. Break it up into small pieces as it cooks. Once done, remove from the skillet and set aside.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them until well combined. Season with salt and black pepper. Pour the eggs into the skillet and scramble over medium heat until cooked through, about 3-4 minutes.

    Prepare the Sourdough

    While the eggs are cooking, toast the sourdough slices in a toaster or on a separate skillet until golden brown.

    Combine the Ingredients

    On each slice of toasted sourdough, layer the cooked hash browns, followed by the cooked sausage and scrambled eggs. Sprinkle the cheddar cheese generously on top.

    Melt the Cheese

    If desired, place the assembled sandwiches under a broiler for 1-2 minutes to melt the cheddar cheese until bubbly and golden.
