    Wash and Cut Potatoes

    Wash the Russet potatoes under cold water to remove any dirt. Peel the potatoes if desired, then cut them into evenly sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato sticks in a large bowl of cold water. Soak them for at least 30 minutes to remove excess starch, which helps to achieve crispiness.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C). Use a thermometer to monitor the temperature.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Carefully add a batch of the dried potato sticks to the hot oil. Fry them for about 5-7 minutes, or until they turn golden brown and crispy. Avoid overcrowding the pot to ensure even cooking.

    Drain the Fries

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil. Sprinkle with salt and pepper while they are still hot.
