    Prepare Egg Mixture

    In a medium bowl, whisk together the milk, vanilla extract, cinnamon, and sugar until well combined.

    Cook Bacon

    In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Once cooked, transfer them to a paper towel-lined plate to drain excess fat.

Making French Toast

    Dip and Cook Bread

    Heat 1 tablespoon of butter in the same skillet over medium heat. Dip each slice of sourdough bread into the egg mixture, coating both sides, and place in the skillet. Cook for 3-4 minutes on each side until golden brown. Repeat with remaining slices, adding more butter as needed.

    Cook Over Easy Eggs

    In a separate skillet, add a small amount of butter and heat over medium-low heat. Crack the eggs into the skillet and cook for 2-3 minutes until the whites are set but the yolks are still runny. Carefully flip the eggs and cook for an additional 1-2 minutes. Remove from heat.

Assembly

    Place two pieces of French toast on a plate, add two slices of bacon on top of one piece, and then place the over easy eggs on top of the bacon. Drizzle with maple syrup and top with the second piece of French toast.
