Prepare the French Toast

    Make the Egg Mixture

    In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

    Coat the Sourdough

    Dip each slice of sourdough bread into the egg mixture, allowing the bread to soak for a few seconds on each side. Ensure both sides are evenly coated.

    Cook the French Toast

    Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, add the soaked slices of sourdough bread to the skillet. Cook for about 3-4 minutes on each side or until golden brown. Repeat with the remaining bread slices, adding more butter as necessary.

    Cook the Bacon

    In a separate skillet, cook the bacon strips over medium heat until crispy, about 5-7 minutes. Flip the bacon occasionally to ensure even cooking. Once done, remove from the skillet and place on paper towels to absorb excess grease.

    In the same skillet used for the bacon (with a little bacon grease left for flavor), crack the two eggs. Cook over medium-low heat until the whites are set but the yolks remain runny, about 2-3 minutes. For over-easy eggs, gently flip the eggs and cook for an additional 30 seconds.

    On a serving plate, stack the French toast slices, place the crispy bacon on the side, and top with the over-easy eggs. Drizzle maple syrup over the French toast to taste.
