Method

Preparing the Eggs

  1. 1

    Cook the Eggs

In a non-stick skillet, heat the skillet over medium heat. Crack the eggs into the skillet and cook for about 2-3 minutes until the whites are set but the yolks are still runny. Season with salt and pepper to taste. Remove from heat and keep warm.

Making the French Toast

  1. 2

    Prepare the Mixture

In a medium bowl, whisk together the milk, 2 eggs, ground cinnamon, and vanilla extract until well combined.

  2. 3

    Dip the Bread

Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter. Dip each slice of sourdough bread into the egg mixture, allowing it to soak for a few seconds on each side.

  3. 4

    Cook the Bread

Place the soaked bread slices onto the skillet. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Add more butter as needed for additional slices.

Cooking the Bacon

  1. 5

    Cook the Bacon

In a separate pan, cook the bacon over medium heat until crispy, about 5-7 minutes. Flip occasionally to ensure even cooking. Remove and drain on paper towels.

Serving

  1. 6

    Plate and Serve

On a plate, arrange the French toast, top with over-easy eggs, and bacon. Drizzle maple syrup over the top to taste, and serve immediately.
