Preparation of Chicken

    Cook the Chicken

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the chicken breasts with salt, black pepper, garlic powder, and paprika on both sides.

    Sear the Chicken

    Place the seasoned chicken breasts in the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the middle. Remove from skillet and let rest.

Cooking the Eggs

    Scramble the Eggs

    In a bowl, beat the eggs with a pinch of salt and black pepper. Heat the remaining tablespoon of olive oil in the same skillet over medium-low heat.

    Add Eggs to Skillet

    Pour the beaten eggs into the skillet. Stir gently with a spatula, cooking until the eggs are just set but still creamy, about 3-4 minutes. Remove from heat.

Toasting Sourdough

    Toast the Bread

    While the eggs are cooking, toast the sourdough slices in a toaster or under a broiler until golden brown and crispy.

Plating

    On each slice of toasted sourdough, place a portion of the seared chicken, followed by a generous scoop of scrambled eggs. Optionally top with fresh parsley and grated cheese.
