    Cook the Eggs

    In a non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet, taking care not to break the yolks. Season with salt and pepper. Cook for about 2-3 minutes, until the whites are set but the yolks are still runny. Carefully flip the eggs and cook for another 1-2 minutes for over-easy. Remove from heat and set aside.

Biscuits

    Toast the Biscuits

    While the eggs are cooking, toast the biscuits in a toaster or oven until golden brown. Once toasted, spread butter on each biscuit and set aside.

Bacon

    Cook the Bacon

    In the same skillet used for the eggs, add the bacon slices. Cook over medium heat until crispy, about 4-5 minutes per side. Remove from skillet and place on paper towels to drain excess grease.

Gravy

    Make the Gravy

    In the skillet, with a tablespoon of bacon grease remaining, melt the 2 tablespoons of butter over medium heat. Add the flour and whisk continuously for about 1 minute to make a roux. Gradually add the milk while whisking to avoid lumps. Cook for about 5 minutes until the gravy thickens. Season with salt and pepper to taste.
