Main Ingredients

Method

Preparation

  1. 1

    Heat the Milk

In a large pot, heat the whole milk over medium heat, stirring occasionally until it reaches 190°F (88°C).

  2. 2

    Add Vinegar

Remove the pot from heat and stir in the white vinegar. Let it sit for about 5-10 minutes until the curds begin to form.

  3. 3

    Add Rennet

Dissolve the rennet tablet in 1 cup of water and then stir it into the curd mixture. Allow it to sit undisturbed for 30 minutes.

  4. 4

    Cut the Curd

Once the curds have set, use a long knife to cut the curd into 1-inch cubes. Let it rest for another 5-10 minutes.

  5. 5

    Cook the Curds

Gently heat the curds to 105°F (40°C) while stirring occasionally. This will help them firm up. Continue cooking for about 30-40 minutes.

  6. 6

    Drain the Curds

Using a slotted spoon, transfer the curds to a colander lined with cheesecloth. Allow the whey to drain for about 5-10 minutes.

  7. 7

    Rinse and Salt

Rinse the curds under cold water to remove any remaining whey, then sprinkle salt over the curds and mix gently to incorporate.

Optional Seasoning

  1. 8

    Add Seasoning

If desired, sprinkle garlic powder, dried herbs, and black pepper over the curds. Toss gently to combine.
