Dissolve the rennet tablet in 1 cup of water and then stir it into the curd mixture. Allow it to sit undisturbed for 30 minutes.

Once the curds have set, use a long knife to cut the curd into 1-inch cubes. Let it rest for another 5-10 minutes.

Gently heat the curds to 105°F (40°C) while stirring occasionally. This will help them firm up. Continue cooking for about 30-40 minutes.

Using a slotted spoon, transfer the curds to a colander lined with cheesecloth. Allow the whey to drain for about 5-10 minutes.

Rinse the curds under cold water to remove any remaining whey, then sprinkle salt over the curds and mix gently to incorporate.
