Preheat the Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.

Add Buttermilk
Gently fold in the buttermilk until just combined. Be careful not to overmix.

Shape Biscuits
Turn the dough out onto a floured surface and knead gently 2-3 times. Pat the dough into a rectangle about 1-inch thick. Cut out biscuits using a biscuit cutter or glass.

Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.

In a large skillet over medium heat, crumble and cook the ground sausage until browned and cooked through, about 5-7 minutes.

Sprinkle the flour over the cooked sausage and stir to combine. Cook for an additional 1-2 minutes, stirring constantly.

Slowly whisk in the milk, stirring continuously to avoid lumps. Bring to a simmer and cook until the gravy thickens, about 5 minutes.

Season the gravy with salt, black pepper, and red pepper flakes. Adjust seasonings to taste.
