    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to resemble fries.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain and dry the soaked potatoes thoroughly. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. While they are still hot, drizzle with truffle oil, and toss to coat. Add salt and black pepper to taste.

    Serve

    Transfer the truffle fries to a serving plate and sprinkle with grated parmesan cheese. Serve immediately.
