    Prepare the Vegetables

    Peel and dice the sweet potatoes into small cubes. Chop the onion and bell peppers. Mince the garlic.

    Cook the Sweet Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season with salt and pepper, and cook for about 10-15 minutes, stirring occasionally, until tender and lightly browned.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onions, red and green bell peppers, and minced garlic. Sauté for about 5-7 minutes until the onions are caramelized and the peppers are soft.

    Combine Duck Confit

    Add the duck confit to the skillet with the sautéed vegetables. Stir well and cook for an additional 5 minutes, allowing the flavors to meld together.

    Remove from heat, sprinkle with fresh parsley, and serve hot.
