Cooking Directions
- 1
Cook the Linguini
Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente. Drain and set aside.
- 2
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the diced local tomatoes and lunchbox peppers, cooking until softened, about 3-4 minutes.
- 3
Add the Seafood
To the skillet, add the clams, mussels, and shrimp. Pour in the cioppino broth, cover, and cook until the clams and mussels open and the shrimp are cooked through, about 5-7 minutes. Discard any unopened clams or mussels.
- 4
Combine and Serve
Add the cooked linguini to the skillet and toss to coat in the broth and seafood. Season with salt and black pepper to taste. Remove from heat and garnish with chopped fresh parsley.
- 5
Serve with Saffron Aioli
Plate the seafood linguini and drizzle with saffron aioli before serving.
