    Prepare Corn Pudding

    In a saucepan, combine corn kernels, milk, and cornmeal. Cook over medium heat, stirring continuously until the mixture thickens. Stir in butter and season with salt. Pour into a greased baking dish and bake at 350°F (175°C) for 25 minutes or until golden on top.

    Make Red Bell Pepper Agro-Dolce

    Dice the red bell pepper. In a skillet, combine diced red bell pepper, sugar, and red wine vinegar. Cook over medium heat until the pepper softens and the mixture thickens. Set aside.

    Fry Pork Speck

    In a separate pan, fry the pork speck until crispy. Remove and drain on paper towels.

    Prepare Pangrattato

    In the same pan, add olive oil and bread crumbs, cooking until golden brown and crispy. Season with salt and pepper.

    Sear Scallops

    Heat olive oil in a skillet over high heat. Season scallops with salt and pepper, then add to the skillet. Sear for 2-3 minutes on each side until golden brown and cooked through.

    Assembly

    On a plate, place a scoop of corn pudding, top with seared scallops, drizzle with red bell pepper agro-dolce, add crispy pork speck, and garnish with local frisée and pangrattato.
