Marinate Shrimp
In a bowl, toss the shrimp with Cajun seasoning and olive oil until well coated. Let marinate for at least 15 minutes.

Prepare White Wine Reduction
In a saucepan, combine chopped shallots and white wine. Bring to a simmer over medium heat and reduce until the mixture is almost dry.

Add Cream
Add heavy cream and bring to a gentle simmer. Cook for a few minutes until slightly thickened.

Finish Sauce
Gradually whisk in the cold butter, one cube at a time, until the sauce is smooth and emulsified. Season with salt and black pepper to taste. Keep warm.

Cook Shrimp
Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side until they are pink and opaque.
Serving

Serve the cooked shrimp drizzled with Cajun beurre blanc alongside slices of warm baguette.
