    Caramelize the Onions

    In a large pot, melt the unsalted butter over medium heat. Add the sliced yellow onions and cook, stirring occasionally, until they are deeply caramelized, about 30-40 minutes.

    Add Liquid Ingredients

    Once the onions are caramelized, add the dry white wine to deglaze the pot, scraping any browned bits off the bottom. Let it simmer for about 5 minutes.

    Combine Broth and Seasonings

    Add the beef broth, thyme, bay leaves, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes.

    Prepare the Baguette

    While the soup is simmering, slice the baguette into thick slices and toast them until golden brown.

    Serve the Soup

    Remove the bay leaves from the soup. Ladle the soup into bowls, and top each bowl with a slice of toasted baguette and a generous amount of shredded Gruyère cheese.

    Place the bowls under a broiler until the cheese is melted and bubbly, about 2-3 minutes. Serve immediately.
