    Prepare the Fish

    Rinse the cod fillets under cold water and pat dry with paper towels. Season with salt and black pepper.

    Set Up Breading Station

    In three separate shallow dishes, place the flour, beaten eggs, and a mixture of cornmeal and a bit of salt and pepper.

    Bread the Fish

    Dredge each cod fillet first in flour, then dip into the beaten eggs, and finally coat with the cornmeal mixture. Ensure each piece is well-coated.

    Fry the Fish

    In a large skillet, heat oil over medium-high heat. Once hot, carefully add the breaded cod fillets. Fry for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

    Assemble the Sandwich

    Toast the brioche buns lightly. Spread tzatziki sauce on the bottom half of each bun, add a lettuce leaf, place the crispy fish on top, and finish with lemon-pickle relish. Top with the other half of the bun.
