    Prepare the Ingredients

    Wash the collard greens thoroughly to remove any dirt. Remove the tough stems and chop the leaves into bite-sized pieces. Dice the onion and mince the garlic.

    Cook the Pork

    In a large pot or Dutch oven, cook the peppered side pork over medium heat until it is crispy. Remove the pork from the pot and set it aside, leaving the drippings in the pot.

    Sauté Vegetables

    In the same pot, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.

    Add Collard Greens

    Add the chopped collard greens to the pot. Stir to combine and cook for about 5 minutes until they start to wilt.

    Add Broth and Seasoning

    Pour in the chicken broth, add the salt, black pepper, and red pepper flakes. Bring to a boil, then reduce to a simmer.

    Simmer

    Cover the pot and let the greens simmer for about 30-40 minutes, or until they are tender.

    Finish with Cider Vinegar

    Stir in the cider vinegar and adjust seasoning to taste. Serve warm, topped with the crispy pork.
