Tortilla Preparation

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.

    Incorporate Fat

    Add the lard or vegetable shortening to the dry ingredients. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add the water, mixing until a dough forms. You may need to adjust the amount of water slightly depending on the humidity.

    Knead the Dough

    Turn the dough onto a lightly floured surface and knead for about 2-3 minutes until smooth and elastic.

    Rest the Dough

    Cover the dough with a clean cloth and let it rest for at least 30 minutes. This allows the gluten to relax and makes rolling easier.

    Roll the Tortillas
