    Prepare the Steak

    Preheat a grill or charbroiler to high heat. Season the aged sirloin steak with olive oil, salt, and black pepper. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Slice the Steak

    Once cooked, remove the steak from the grill and let it rest for 5 minutes. Thinly slice the steak against the grain.

    Prepare the Rolls

    While the steak is resting, cut the ciabatta rolls in half and lightly toast them on the grill or in a toaster.

    Assemble the Sandwich

    On the bottom half of each toasted ciabatta roll, layer the sliced steak, crumbled blue cheese, arugula, and drizzle with cherry balsamic vinegar. Top with the other half of the roll.

    Serve

    Serve the steak sandwiches immediately while warm, with extra cherry balsamic on the side if desired.
