Pretzel Preparation

    Activate Yeast

    In a large bowl, combine warm water, active dry yeast, and sugar. Stir gently and let it sit for about 5 minutes until frothy.

    Make Dough

    Add all-purpose flour and salt to the yeast mixture. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour until doubled in size.

    Shape Pretzels

    Preheat your oven to 450°F (230°C). Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

    Baking Soda Bath

    In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Egg Wash and Salt

    Whisk the egg and brush it over each pretzel. Sprinkle coarse sea salt on top.

    Bake in the preheated oven for 12-15 minutes until golden brown. Remove from oven and let cool slightly before serving.
