Prepping the Turkey
Preheat your oven to 325°F (165°C). Remove the turkey giblets and pat the turkey dry with paper towels.

Seasoning
In a bowl, mix the olive oil, salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary. Rub this mixture all over the turkey, including under the skin and inside the cavity.

Add Lemon and Herbs
Stuff the cavity of the turkey with the lemon (cut into quarters) and the bunch of fresh herbs.

Roasting
Place the turkey breast side up in a roasting pan. Roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C).

Basting
Baste the turkey with the pan juices every 30 minutes to keep it moist.

Resting
Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
