For the Marinade and Steak

Method

Preparation and Cooking

  1. 1

    Prepare the Marinade

Remove the stems and seeds from the dried red chiles. Place them in a saucepan with enough water to cover them and simmer for about 10 minutes until softened. Drain and transfer to a blender.

  2. 2

    Blend the Marinade

Add the garlic cloves, cumin, oregano, lime juice, olive oil, salt, and black pepper to the blender with the softened chiles. Blend until smooth.

  3. 3

    Marinate the Steak

Place the flank steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

  4. 4

    Cook the Steak

Preheat a grill or grill pan over high heat. Remove the steak from the marinade and allow excess marinade to drip off. Grill the steak for about 5-7 minutes per side for medium-rare, or until desired doneness.

  5. 5

    Rest and Serve

Once cooked, remove the steak from the grill and let it rest for 5 minutes before slicing against the grain. Serve with your choice of sides.
