    Prepare the Tarragon Butter

    In a small bowl, mix the softened unsalted butter, chopped tarragon, minced garlic, and lemon juice until well combined. Season with a pinch of salt and pepper to taste. Set aside at room temperature.

    Prepare the Steak

    Take the New York strip steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

    Season the Steaks

    Generously season both sides of the steaks with salt and black pepper.

    Cook the Steaks

    Preheat a grill or skillet over high heat. Once hot, add the steaks and cook for about 4–5 minutes on one side. Flip the steaks and cook for another 3–4 minutes for medium-rare, or until your desired doneness is achieved.

    Rest the Steaks

    Remove the steaks from the heat and let them rest on a cutting board for at least 5 minutes. This allows the juices to redistribute throughout the meat.

    Serve

    Top each steak with a generous dollop of the tarragon melting butter and serve immediately.
