    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes. This ensures even cooking. Pat the steak dry with paper towels, then season both sides generously with salt and black pepper.

    Heat the Pan

    In a skillet, heat the olive oil over medium-high heat until it shimmers. Make sure the pan is hot enough to sear the steak.

    Sear the Steak

    Carefully place the filet mignon in the hot skillet. Sear for 4-5 minutes on one side without moving it, until a golden-brown crust forms.

    Flip and Add Flavor

    Flip the steak using tongs and add the butter and rosemary to the pan. Cook for an additional 3-4 minutes for medium-rare, basting the steak with the melted butter and herb mixture.

    Rest and Serve

    Remove the steak from the skillet and let it rest for 5 minutes on a cutting board. This allows the juices to redistribute. Slice and serve as desired.
