    Prepare the Rice

    In a saucepan, combine the white rice, water, and 1/2 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes.

    Fluff with Cilantro and Lime

    Once the rice has rested, fluff it with a fork and mix in the chopped cilantro, lime juice, and remaining 1/2 tsp salt. Set aside.

    Sear the Salmon

    Season the salmon fillets with salt and black pepper. Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until the salmon is cooked through.

    Sauté the Vegetables

    In the same skillet, add the remaining 2 tbsp of olive oil and the minced garlic. Add seasonal vegetables and sauté for about 5-7 minutes until they are tender but still crisp. Season with salt and pepper to taste.

    Serve

    On each plate, serve a portion of cilantro lime rice topped with a seared salmon fillet and a side of sautéed seasonal vegetables.
