    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline or a sharp knife, slice the potatoes into very thin rounds (about 1/8 inch thick).

    Layer the Potatoes

    In a large bowl, combine the sliced potatoes with melted butter, olive oil, salt, black pepper, and thyme. Toss until the potatoes are evenly coated. Start layering the potato slices in a greased baking dish, overlapping them to create a fan-like effect.

    Bake the Potatoes

    Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 20-30 minutes, or until the potatoes are golden brown and crispy.

    Serve

    Once done, remove from the oven and let cool for a few minutes. Cut into squares or wedges and serve warm.
