Prepare the Crust
Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan. In a mixing bowl, combine graham cracker crumbs with melted butter and press into the bottom of the pan to form a crust.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar, beating until well combined. Add sour cream, vanilla extract, and lemon juice; mix until smooth. Add eggs one at a time, mixing on low speed until just combined.

Bake the Cheesecake
Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for 65-75 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, or overnight, to set.

Serve with Sauce
Slice the cheesecake and serve with a choice of raspberry, chocolate, or caramel sauce drizzled on top.
