Prepare the Lemon Cake
Bake or purchase a lemon cake and let it cool completely. Once cooled, slice it into even layers.

Make the Cheesecake Layer
In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add in vanilla extract and sour cream, mixing until combined.

Whip the Heavy Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cheesecake mixture.

Assemble the Layers
In a trifle dish or individual cups, layer the lemon cake, raspberry jam, and cheesecake mixture. Repeat layers until all ingredients are used, finishing with the cheesecake layer.

Make the Lemon Mousse
In a small bowl, dissolve the unflavored gelatin in water. In another bowl, mix heavy cream, lemon zest, lemon juice, and powdered sugar until soft peaks form. Fold in the gelatin mixture.

Top with Lemon Mousse
Spread or pipe the lemon mousse on top of the final cheesecake layer. Refrigerate for at least 4 hours to set.
