Enchilada Ingredients

Method

Preparation Steps

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Sauté the Onion and Garlic

In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cumin, and sauté for another minute.

  3. 3

    Prepare the Tortillas

Warm the corn tortillas in a microwave or on a skillet to make them pliable.

  4. 4

    Assemble the Enchiladas

Spread a layer of refried beans on each tortilla. Add a spoonful of the onion and garlic mixture and a sprinkle of cheese. Roll up the tortillas and place them seam-side down in a greased baking dish.

  5. 5

    Add Green Chile Sauce

Pour the green chile sauce over the rolled enchiladas. Sprinkle the remaining cheese on top.

  6. 6

    Bake

Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.

  7. 7

    Serve

Let the enchiladas cool for a few minutes before serving. Enjoy with your favorite toppings like sour cream, cilantro, or avocado.
