Giblet Gravy Preparation

    Cook the Giblets

    In a saucepan, combine the turkey giblets with enough water to cover. Bring to a boil, reduce heat, and simmer for about 1 hour. Remove giblets, chop them finely, and set aside. Reserve broth.

    Make the Roux

    In a separate saucepan, melt the butter over medium heat. Add the chopped onion and celery, and sauté until soft (about 5 minutes). Stir in the flour and cook, stirring constantly, for another 2-3 minutes until golden.

    Combine and Thicken

    Gradually whisk in the reserved giblet broth and chicken or turkey broth. Continue whisking until the mixture thickens, about 5-7 minutes.

    Add Giblets

    Stir in the chopped giblets, black pepper, and salt to taste. Simmer for another 5 minutes before serving.
