    Prepare the Giblets

    In a saucepan, combine turkey giblets and 4 cups of water. Bring to a boil, then reduce heat and simmer for about 30 minutes. Remove the giblets, chop them finely, and reserve the broth.

    In a skillet, melt the butter over medium heat. Add chopped onion, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes. Stir in the flour and cook, stirring constantly, for another 2 minutes until the mixture is lightly browned.

    Combine and Thicken

    Gradually whisk in the reserved giblet broth into the roux, ensuring there are no lumps. Bring to a simmer and cook until the gravy thickens, about 5-10 minutes.

    Season the Gravy

    Add the chopped giblets back into the gravy along with salt, black pepper, sage, and thyme. Stir well and let it simmer for an additional 5 minutes to blend the flavors.
