    Make the Guacamole

    In a medium bowl, scoop out the ripe avocados and mash them with a fork until smooth. Add lime juice, chopped cilantro, diced red onion, diced jalapeño, and salt. Mix well until combined.

    Prepare for Frying

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

    Form the Guacamole Balls

    Using your hands, form the guacamole mixture into small balls, about 1 inch in diameter.

    Coat the Guacamole Balls

    Roll each guacamole ball in flour, dip it in beaten eggs, and then coat it with panko breadcrumbs, ensuring they are fully covered.

    Fry the Guacamole Balls

    In a large pot or deep fryer, heat vegetable oil over medium-high heat. Once the oil is hot, carefully add the breaded guacamole balls in batches. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
