    Prepare the Batter

    In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and has no lumps.

    Heat the Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Cod

    Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered fillets into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the Slaw

    In a separate bowl, mix together shredded cabbage, chopped cilantro, lime juice, and salt to taste to create the house slaw.

    Make the Green Chile Crema

    In a small bowl, combine sour cream, diced green chiles, lime juice, and a pinch of salt. Mix well and set aside.

    Assemble the Tacos

    Warm the tortillas in a dry skillet or microwave. Place a piece of fried cod on each tortilla, top with house slaw, and drizzle with green chile crema. Serve immediately.
