Scrambled Eggs

    Prepare the Eggs

    In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

    Cook the Eggs

    In a skillet, melt the butter over medium heat. Pour in the egg mixture and stir gently until the eggs are scrambled and cooked to your liking.

    In a skillet, cook the bacon or sausage links over medium heat until crispy and browned.

Breakfast Potatoes

    Prepare the Potatoes

    Dice the potatoes into small cubes. Toss with olive oil, salt, pepper, and onion powder.

    Cook the Potatoes

    Heat a skillet over medium heat and cook the seasoned potatoes until crispy and golden brown, about 15-20 minutes.

Peppers Salsa

    Combine Salsa Ingredients

    In a bowl, mix together diced tomatoes, bell peppers, onion, cilantro, and lime juice. Stir well and set aside.

Diced Hatch Green Chile

    Prepare the Green Chile

    Simply dice the Hatch Green Chile and set aside for serving.

Homemade Biscuits

    Mix the Dry Ingredients

    In a bowl, combine flour, baking powder, and salt.

    Cut in the Butter

    Cut in the butter until the mixture resembles coarse crumbs.

    Add Milk and Form Dough

    Stir in milk until just combined. Turn dough onto a floured surface and knead gently.

    Roll out to about 1 inch thick, cut into rounds, and bake at 425°F (220°C) for 12-15 minutes until golden.
