In a bowl, combine the chicken breasts and buttermilk. Cover and refrigerate for at least 1 hour, preferably overnight.

In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Coat the Chicken
Remove the chicken from the buttermilk, letting excess liquid drip off. Dredge each piece in the seasoned flour, pressing gently to adhere.

Fry the Chicken
Carefully place the coated chicken in the hot oil. Fry for 5-7 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).

Assemble the Sandwich
Place the fried chicken on the bottom half of the brioche bun. Top with lettuce, tomato, and pickles. Finish with the top half of the bun.
