    Prepare the Cranberry Sauce

    In a saucepan, combine cranberries and granulated sugar. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes. Let it cool completely.

    In a heatproof bowl, melt the chopped white chocolate over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

    Dissolve the Gelatin

    In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes. Then, heat the mixture gently until the gelatin dissolves completely. Stir it into the cooled white chocolate.

    In a large bowl, whip the heavy cream until soft peaks form. Add vanilla extract and a pinch of salt, then continue whipping until stiff peaks form.
