Preparation Instructions

  1. 1

    Prepare the Corn Mixture

In a blender, combine the fresh corn kernels, heavy cream, milk, granulated sugar, eggs, vanilla extract, and salt. Blend until smooth.

  2. 2

    Bake the Corn Brulee

Preheat the oven to 325°F (163°C). Grease ramekins with butter and pour the corn mixture into them. Place the ramekins in a baking dish and fill the dish with water until it reaches halfway up the sides of the ramekins.

  3. 3

    Cooking Time

Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool at room temperature.

  4. 4

    Chill and Caramelize

Refrigerate the ramekins for at least 2 hours or until fully chilled. Once chilled, sprinkle a thin layer of brown sugar on top of each custard. Use a kitchen torch to caramelize the sugar until golden and bubbly.

  5. 5

    Serve

Allow the brulee to cool for a minute after caramelizing the sugar, then serve immediately.
