Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the bone-in chicken breasts with salt, pepper, and paprika.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced onion and minced garlic. Sauté until the onions are translucent.

Add Green Chile
Stir in the chopped green chile and cook for an additional 2-3 minutes.

Cook the Chicken
In the same skillet, push the onion and chile mixture to the side and add the chicken breasts. Cook for 5-6 minutes on each side until browned.

Combine Ingredients
Once the chicken is browned, top each breast with the sautéed vegetable mixture and shredded Monterey Jack cheese.

Bake
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
