Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Sauté Chicken
In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Add Vegetables
Add the sliced mushrooms and artichoke hearts to the skillet. Cook for another 5 minutes, stirring occasionally.

Deglaze the Pan
Pour in the white wine and chicken broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

Combine and Serve
Return the chicken to the skillet, spooning some sauce over it. Simmer for an additional 5 minutes. Garnish with fresh parsley before serving.
