Prepare the Filling
In a mixing bowl, combine the shredded cheese and chopped onion. Add salt to taste and mix well.

Soften the Tortillas
In a skillet, heat vegetable oil over medium heat. Briefly fry each tortilla for about 10-15 seconds on each side until softened. Drain on paper towels.

Assemble the Enchiladas
Take a softened tortilla, place about 2 tablespoons of the cheese filling in the center, roll it up tightly, and place seam-side down in a baking dish. Repeat until all tortillas are filled.

Add Chile Sauce
Pour the red or green chile sauce evenly over the rolled enchiladas, covering them completely.

Bake
Preheat the oven to 375°F (190°C). Bake the enchiladas for about 20-25 minutes or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool for a few minutes. Serve hot, garnished with sour cream and fresh cilantro.
