    Prepare the Beef Tenderloin

    Preheat the oven to 400°F (200°C). Season the beef tenderloin with salt and black pepper on all sides.

    Sear the Beef

    In a large oven-safe skillet, heat olive oil over medium-high heat. Once the oil is hot, sear the tenderloin for 2-3 minutes on each side until browned.

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches your desired doneness (130°F for medium-rare).

    Rest the Beef

    Remove the beef from the oven and let it rest for at least 10 minutes before carving.

    Prepare the Bordelaise Sauce

    In a saucepan, combine red wine and shallots. Bring to a simmer and reduce until thickened, about 10 minutes.

    Finish the Sauce

    Add beef stock and fresh thyme to the saucepan. Simmer until reduced by half. Stir in butter and season with salt and black pepper to taste.

    Carve and Serve

    Carve the rested tenderloin tableside and drizzle with the warm bordelaise sauce before serving.
