    Prepare the Steak

    Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes. Pat it dry with paper towels.

    Season the Steak

    Generously season both sides of the filet mignon with kosher salt and black pepper.

    Heat the Pan

    In a cast-iron skillet or heavy pan, heat the olive oil over medium-high heat until it begins to shimmer.

    Sear the Steak

    Add the filet mignon to the hot skillet and sear for about 4-5 minutes on one side without moving it. Flip the steak and sear the other side for another 4-5 minutes for medium-rare.

    Add Aromatics

    During the last minute of cooking, add butter, crushed garlic cloves, and fresh rosemary to the pan. Baste the filet with the melted butter for added flavor.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing to allow the juices to redistribute.
