Prepare the Brisket
Preheat your oven to 300°F (150°C). Rub the beef brisket with olive oil, followed by the garlic powder, onion powder, smoked paprika, salt, and black pepper. Ensure the brisket is evenly coated.

Roast the Brisket
Place the seasoned brisket in a roasting pan. Cover tightly with aluminum foil and roast in the preheated oven for about 4-5 hours, or until the meat is fork-tender.

Prepare the Potatoes
While the brisket is roasting, wash and chop the potatoes into bite-sized pieces. Toss them in olive oil, salt, and pepper. Spread them out on a baking sheet.

Roast the Potatoes
During the last hour of the brisket cooking time, add the potatoes to the oven and roast for about 30-40 minutes, or until golden and crispy.

Slice and Serve
Once the brisket is done, remove it from the oven and let it rest for 15 minutes. Slice thinly against the grain and serve with Cactus Jack Sauce drizzled on top, alongside the roasted potatoes and seasonal vegetables.
