Preparation

    Make the Pico de Gallo

    In a bowl, combine diced mango, pineapple, red onion, cilantro, lime juice, and salt. Mix well and set aside.

    Prepare the Potato Mille-Feuille

    Preheat the oven to 375°F (190°C). Layer the thin potato slices in a greased baking dish, brushing each layer with melted butter. Season with salt and pepper. Bake for 30-35 minutes until golden and crispy on top.

Cooking the Mahi Mahi

    Season the Fish

    In a small bowl, mix paprika, cayenne, garlic powder, onion powder, thyme, salt, and black pepper. Rub the spice mixture over both sides of the mahi mahi fillets.

    Cook the Fish

    Heat olive oil in a skillet over medium-high heat. Add the seasoned mahi mahi fillets and cook for about 3-4 minutes on each side, or until blackened and cooked through.

Sauté the Spinach

    Cook Spinach

    In another skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add the spinach and cook until wilted, about 2-3 minutes. Season with salt to taste.
