Preparation

    Make the Bison Sausage

    In a large bowl, combine ground bison, pork fat, minced garlic, smoked paprika, black pepper, salt, and cayenne pepper. Mix until all ingredients are well incorporated. Form into sausage links or patties.

    Cook the Sausage

    Preheat your smoker to 225°F (107°C). Smoke the sausages for about 1.5 to 2 hours, or until the internal temperature reaches 160°F (71°C).

    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, for about 20-25 minutes, or until onions are golden brown and caramelized.

    Prepare the Chipotle Aioli

    In a small bowl, mix mayonnaise, minced chipotle peppers, and lime juice until well combined. Adjust seasoning to taste.

    Serve

    On a plate, create a bed of caramelized onions. Place the smoked bison sausage on top. Serve with baked bread on the side and a small bowl of chipotle aioli for dipping.
