    Prepare the Sweet Potato Chips

    Preheat your oven to 400°F (200°C). Slice the sweet potatoes into thin lattice shapes using a mandoline slicer or knife. Toss the sweet potato slices in olive oil, smoked paprika, salt, and pepper. Spread them in a single layer on a baking sheet.

    Bake the Chips

    Bake the sweet potato chips in the preheated oven for 15-20 minutes, flipping halfway through, until they are crispy and golden. Remove from the oven and set aside.

    Prepare the Salmon

    While the chips are baking, prepare the salmon. In a small bowl, mix together agave nectar, salt, and pepper. Brush the mixture on both sides of the salmon fillets.

    Grill the Salmon

    Heat a grill or grill pan over medium-high heat. Grill the salmon for about 4-5 minutes on each side or until it flakes easily with a fork. Just before finishing, place the lime halves on the grill, cut side down, and grill for about 2 minutes.

    Serve

    Plate the grilled salmon fillets with a side of sweet potato lattice chips. Squeeze the grilled lime over the salmon and serve immediately.
