Prime Rib and Accompaniments
Method
Preparation and Cooking
- 1
Prepare the Prime Rib
Preheat your oven to 450°F (232°C). Season the prime rib generously with salt, black pepper, garlic powder, and onion powder on all sides.
- 2
Roast the Prime Rib
Place the seasoned prime rib in a roasting pan and roast in the preheated oven for 20 minutes. Then, lower the temperature to 325°F (163°C) and continue roasting for about 60-75 minutes, or until the internal temperature reaches your desired doneness (125°F for rare, 135°F for medium-rare, 145°F for medium).
- 3
Rest the Meat
Remove the prime rib from the oven and let it rest for at least 15-20 minutes before slicing. This helps the juices redistribute.
- 4
Make the Au Jus
While the meat is resting, pour the beef broth into the roasting pan to deglaze, scraping up any browned bits. Simmer over medium heat until slightly reduced.
- 5
Prepare Creamy Horseradish
In a bowl, combine horseradish cream, sour cream, and lemon juice. Mix well and adjust seasoning to taste.
